Factory settings are exactly like what you would see if you took a new phone out of the box. It knows NOTHING. You would have to reprogram your phone with whatever you added to it. If it has a SIM card then it will retain the phone number and service.

If you are just interested in logging in as a previous employee, you can reset the code for a specific employee through P-Mode option for Employee maintenance.
To reset the till, perform a S-Mode Memory All Clear.
You don't have to reprogram anything with an ipod, the software are giving you problems, you can reset it back to factory settings(default settings) ie. "Restoring iPod to factory settings". All your data will be deleted upon reseting to default settings. Reference link fromApple
