    I'm a former Hobart tech. (1994-1999), independent since. Hobart is extremely proprietary with their manuals. I didn't keep a single one when I quit in 1999 to become independent.

Hobart FT1000 Flight Type Commercial Dishwasher. The final rinse is not showing the temperature number.
Probably the temperature sensor, but do you want to risk $227 on a guess? It is a commercial machine, just call your local service tech.

AM-15 P-1 error, fill with wrench, replaced all three probes, still have issue. Won’t fill or run
Manual below, In troubleshooting it only shows P1, P2 & P3 contact dealer. You may find other info which may help

Need bushing for sprayarm and repair manual
The wash arm bushing for this model is not available separately. You can use the bushing from the LX series and cut it shorter to length. Hobart will not issue service manuals to non Hobart personel because of liability issues. If you injured yourself from misinterpreting the manual, they would apparently be resonsnsible.
