It would mainly depend on the terms of incorporation and/or membership. A publicly listed club would most likely have to report its financial statements but a privately held one might not, unless that is demanded by state law.
Read the club's membership proposal and determine its legal status - only than can you take the matter further

dont need to be in the inside track club member to use coupons received by mail or text and being you receive their mailer your signed up with them as a member [ if your name showes up on the cover ]--but -their are certain ones that apply to inside track and they state it on the coupon in the mailers

Our membership gave the trustees permission to dissolve our club. Do we still have a say as fully paid up members? Can we see the accounts and the minutes? How do we do this?

Morally the answer is yes but you really need to examine the rules and articles of the club.
Usually club members would have the right to see the minutes of a meeting and the accounts or at least part of the accounts on demand but again whatever is in the club rules will be the guide.
I am not an expert on such matters but if you feel the club has not been run well or honestly I think a quorum of like-minded members could have the right to table a motion of no confidence and call for a general vote on the matter.
This will to some extent depend on how the committee is elected or appointed, how many are on the committee and what the club rules say. If the rules do not exclude such things then they should be possible.
I think you need to carry out further research about clubs and read those rules.

Talk to the local police, to see if anything "fraudulent" is happening.
