Fryer lights up goes on then temp continues to climb past control setting, then shuts down. example Temp is set to 350 degrees and fryer stays lit untill it reachs over 400 degrees then it shuts down and pilot light goes out as well.

Your problem is the thermostat is bad.the reason it shuts down is that it trips the hi limit.the hi limit is a saftey device that shuts the system down so the oil doesnt get too hot and catch on fire.remove all the oil from the tank and you should see 2 skinny metal bulbs one is the hi limit bulb the other is the t-stat bulb,make sure they are secured to the bracket.if the t-stat bulb isnt you will also have this issue,simply reattach it.let me know.

Hi limit device trips prematurely (should only trip when oil temp reaches 450F). Check if the hi limit sensing bulb (located inside the fryer tank, between fire tubes) is not touching the fire tube because if it does, it will sense the heat from burner flame which is much higher than oil temp.
When the whole unit shuts down including the pilot light the thermocouple is not working properly. The thermocouple is what tells the gas safety valve that the pilot light is lighted. When the thermocouple fails and does not send the milli-volt (mv) signal to the gas safety valve due a failure the gas safety valve turns off the gas supply. (i.e total shut down) If you have a handyman around you can have him disconnect the thermocouple from the gas valve control and clean the mating area in the gas valve and on the bitter end of the thermocouple. After cleaning then reconnect the thermocouple. This sometimes corrects the problem. FYI you can get a thermocouple at most any large appliance parts supply. (You will need to the know total length) It would be even better to have the old one in hand during the trip to the parts store.
It probably is a problem with the thermostat. The reset button is probably a high limit. The high limit is a safety device to turn the fryer off if the oil gets too hot. Normally they will "trip" somewhere between 375 - 450 degrees F for commercial fryers. I would suggest placing a temperature probe in the oil and see what the oil temp is when it trips. If it trips at a temp below 375, it is a bad high limit. If the thermostat is set at 350 and the temp goes over 400 then the thermostat is bad.
Since you've mention the pilot light goes out at 400 degree F, then we are talking a gas Deep Fryer. The deepfryer usually use at 350 degree F for chips or else. Because the oil will start breaking down its quantity of frying very quickly over that temperature. Most people set at 350 degree F. Now we comes back to your problem, First you should have a deep fryer thermometer they espcially made for deep fryer, (You only mention 400 or better ) that make me think you're only guessing. Knowing the temperature is very important, most Hi limit is set at 420 degree F.
To me it seen the Hi Ltd control is working and that is why it cutting out the pilot when it reach its limit but we don't know what temperature that when the hi limit cutting out at.
When you have a thermometer, put it in the cold oil and turn the temperature to 100 degree F to see what the temperature control cutting out at. slowly increase your setting until it cutting out at 350 degree F . If you set at 250 degree F and the thermometer already reaching 350 degreen F then don't go any further , your temperature control is defective and need to be change a new one.
This is only the first step, you still have to check out the Hi ltd control to see how good its condition is,so far your information say it cutting out at 400 or better. But you've to be sure, because it is a safety control. Hope that will help you , God Bless.
Set the thermostat to 350 degrees,get a thermometer and put it in the oil,when the unit shuts off look at the temp of the oil.If the temp of the oil is higher then the thermostat is bad if not the hi-limit may be.Let me know.
try to change the thermal battery the device that the pilot heats.. other wise there is a screw at the botton of the automatic valve.. try to increase the pilot so it can heat more the thermal battery! u dont have enough voltage to activate the solenoid valve so thats why ur pilot goes off
When the issue starts have you actually checked the grease temperature? You can also checkto see if there is excessive grease build up on the themostat.Sometimes uncooked food particles can cause a boiling type motion in the fryer while they cook. be sure to do regular filterings of the grease,this will cut down on the suspended particles.If the grease temp is above 350, shut power off and check continuity on the thermostat,it could be sticking closed,in which case it will need to be replaced
When high is displayed it means that the probe and controller is reading that your oil temp is 30 degrees over your set temp. Use an external probe, locate it about one inch above your probe in the tank check actual temp and compare to your set temp. If you find that it is not 30 degrees over than there may be a problem with your probe, wiring or the digital controller. With a multi meter you can check your probe resitance it should be at 942 ohms at 350 degrees.
