On most phones, while you are on(or making) a call, you can adjust the sound up/down using volume buttons.

Does your phone not have an external volume rocker or volume buttons? You should also be able to adjust the volume from within the Android OS under "sounds".
If the volume is already at its max and you are still having difficulty, it may just be that your handset doesn't have a terribly good speaker in it, and there is nothing that can be done :(
I am guessing you are interested in handsfree call conversation. Whilst it is mentioned on the specification sheet of the phone that it has speaker phone, I do not see any mention of how this is used in the user manual. My guess is that only way to use a remote conversation with this phone is to have a bluetooth headset. Refer page 51 and 52 in the user manual from this site. At what point do it mute itself? Is it during calls, music playback, playing a video? Does the mute option get enabled, can you immediately increase the volume or un-mute?
A generalised piece of advise is that a factory restore on most devices including phones can be quite quick and easy, if your are not worried about data stored on the device this can often be the quickest way to cure software issues.
