Projects stop working in less than a minute. "NOT RESPONDING" is at the top. Acid 7 has to be closed through the Task Manager, and all work is lost.
The only "problem" is Acid finding SampleTank 2 when I try to open projects created on xp / win7. Because it's 32bit it installed in (x86). The file path seems to be the issue (since "x86" is not in the file path on xp/7) but other IK apps open fine with xp/7 files and SampleTank 2 opens fine in new projects. if file path consistency is to be maintained a 64bit version is needed...?

I have not used acid since version 6.0, but used to have the same problem.
You might want to go into the settings of acid and change the plug-ins folder to something else. Solution would be to create your own plug-ins folder somewhere on your pc, and point acid to that folder.
If you have it set to the C drive, or the program files folder, that is your problem. Acid is scanning your entire system for plug-ins, instead of just one folder. (plug-ins are also .dll files)
The same goes for the virtual instruments settings in acid.
You might also want to disable the media manager from running when acid starts, it seems to cause a lot of systems to hang. If yours does not, and you use the manager, strike the last idea.

You can copy. You cannot just dump the file data. Unless you have an audio interface with multiple inputs, you can only copy 2 tracks at a time. Also, to sync the timing you'll need a midi port on the computer. Then you make the computer the "master" and the Fostex a "slave" device.

This is exactly what is happening to me also. I thought that it might be a memory issue or maybe a corrupt sound card driver, however this only happens in Acid Pro 7.
Depending how much ram you have may be the issue, if the memory tanks out it gets dumpted into the hard drive causing a slow down in memory performance which would explain the program not running. There are couple things you can try, limit some applications from starting up, or better still increase the ram memory.
