The bridge thickness control on ice-o-matic starts with the low pressure cut-in control that then in turn starts the timer. To start with if you have a low pressure gauge that you trust what I do is take all of the time off of the timer and unplug the water pump. Then start the unit and watch the low pressure gauge to see at what pressure the harvest starts. With R-404A cut in pressure should be around 34psi but depending on the model some units cut in as high as 45psi. Once that is set plug the water pump in again, put about 400 seconds on the timer, see how thick the ice is after 2 cycles and adjust as needed. I would tend to set it closer to 34psi with about 400 seconds on the timer and adjust the timer as needed. If I have to set the timer more than 200 seconds higher or lower than that I would adjust the low pressure cut in. (Lower pressure setting will make the ice thicker.) If you do NOT have a low pressure gauge or the technical ability to check and adjust the low pressure control DO NOT MESS WITH IT. You can, and most likely will, do more harm than good and replacing the low pressure control is a LOT more costly than having a qualified technician adjust it for you.
You need to set the freeze timer it is an adjustable timer remove some time to achieve a thinner bridge, it will have dip switches on it off and on it should be on the control board Ice bridge thickness should not be no thicker than 1/8"
Reduce the thickness thermostat that initiates the timer to minimum, then increase until good ice made.
SOURCE: Ice-o-matic wont' drain water from bin
the purge valve empties the tray... the bin just drains with gravity... If you bin isn't draining... it must be clogged somewhere.

Have you cleaned the unit lately. There is an ice thickness probe that can be adjusted to compensate.
