Yes, you can. The easiest way is to update the iOS system in the Settings app. Also you can resort to iTunes to do that. Follow the instruction below.

Upgraded my iPad 2, from iOS 7.0 to 8.0, and it now crashes and freezes up.

That's because it's simply not powerful enough to handle ios8. I know apple gave the update but unless they give a new bug fixing update to fix the crashing, your stuck with ios8 and a crashing iPad.
I have my iPad 2 with ios7 and I'm not planning to update it.

if you have laptop/desktop computer you can sync the iPad with iTunes and download iOS 8.1.2 there:

What iOS are you running?, and how much free space you have?
iOS 7 requires 2.5 gigs free space. Then update via Itunes on your computer or wifi. if it's the original ipad it maxes out to iOS 5.1.1.
