I have a GE Profile 1200 watt Microwave Model JES2251SJ02, Serial #LZ9 15421 U that was manufactured in June 2012. Over time, microwave door mechanism must have become defective or loose since Microwave won't run because it thinks door is not closed properly AND it's not! How can I fix this since nothing else is likely wrong with it?

Sounds like the problem is in the high voltage. Most common would be magnatron, capacitor and diode. For safety reasons this should be checked by a professional. Look in your owners manual because some high voltage parts have a longer warranty than 1 yr.

If
it goes dead or blows the breaker or GFI when you plug it in or open or close
the door, then there's a problem with a door switch or door switch
mount.
Even though a door switch clicks, it may still be bad inside. Its continuity must be checked.
Door
switch or mount trouble can be caused by slamming the door or by
opening the door while it's cooking without hitting the Stop pad first.
There
are plastic mounts inside the microwave which hold the door switches
and onto which the door latches lock when you close the door.
The screws on these mounts may be loose. If they get too loose, the switches will not be activated properly.
Sometimes
it's a broken tab on the switch holder, allowing the switch to rotate
just out of position. Other times, it's a broken tab on the switch
holder, allowing the switch to rotate just out of position. This tab
can be hard to see, since it is under the bottom edge of the switch.

Sounds like you've had a failure in the microwave portion of the unit.
Microwave not heating problems when the timer/controller board appears to function properly, are related to the following components -
1) Diode
2) Capacitor
3) Transformer
4) Magnetron

Unfortunately, there is no way to tell which part the microwave needs without opening it up for examination. There are a few parts that, if defective, would prevent the oven from heating.
This is NOT a repair that you would want to attempt yourself. The labor for the repair would cost a minimum of $50 and shouldn't exceed $100. You'll also have to pay for the necessary part if it's still available from the manufacture or their parts distributor.

For anyone dealing with the same issue, I have a solution. My terms for parts are likely not per the manual as I don't own one. Unplug, take off two side screws and back screws to remove panel. There are three sensors that are engaged when the two door latch hooks push into the sensor bracket when the door is closed. There is one sensor on the top latch, and two for the bottom latch. My issue was with the top sensor. You should be able to open then close the door and see if the red sensor buttons are being fully engaged. They are engaged by the door latch hooks pushing down onto them via three levers. My top sensor button was not being fully engaged. I found that when I pushed down on the top of the door it would then engage the sensor. My fix was to adjust the position of the sensor bracket.
You need to determine which way the sensor bracket needs to be moved to help the latch fully engage. You have two options. You can loosen and adjust the screws holding the sensor bracket to the microwave (one screw at top, one at the bottom). There is some play. In my case, I needed to slightly bend the metal piece, at the top, where the sensor bracket attaches. I bent in slightly inward, reattached the sensor bracket, and it did the trick.
