Not sure if you are asking if an H600 is automatically a single phase or a 3 phase and the answer is NO. Depending on the motor it will be 1 phase or 3 phase application. It will have 4 wires versus 3 wires -- hope that makes sense 3 of the wires are "HOT" on a 3 phase and only 2 are "HOT" on a single phase Motor.

first thing, there is no 2 phase pwr. there are only single phase or three phase.you have 2 choices either you can convert mixer from 3phase to 1phase which will be expensive, or you can get a rotophase which will make 1phase pwr to 3phase pwr to run mixer, dont go with static phase inverter, only the rotophase inverter

You cannot wire a three phase motor for single phase and you cannot wire a single phase motor for three phase. If you have a three phase dual voltage motor your options are 220 or 440 volts. If you have a single phase dual voltage motor your options are 120 or 240 volts. A 208 volt Hobart motor will only function correctly on 208 volts and is not dual voltage.

This is like asking if a Ford F-350 is a diesel or Gas. Some are and some are not. It's all based on the MOTOR. Maybe you are asking what is 1 phase and what is 3 phase? 1 phase is like regular house current and 3 phase is special electricity that is 3 legs of electricity coming into the mixer and requires 3 phase electric which in most cases is not available in your home, but only businesses that have PAID the electric company to install it -- hope that helps,
