I hope you have the owner's manual for your Casio SE-S700 Electronic Cash Register. If so, the instructions for setting the sales tax start on page E-11.
This is very strange. Are you referring to the receipt printing or reports? Do you have the receipt set to print on every sale, or just when you press the receipt button?
Unfortunately, that particular model will only print "Made in China" on the receipts. You can always change the name of your business to whatever is printed on the receipts now. No big deal, as I know an oil and air filter company that diversified into the package delivery business and kept their old name: Purolator. If they can do it, so can you.
If you removed the batteries and lost all of the other programming but the old receipt message is still there, then someone has programmed a bitmap logo into the non volatile flash memory. You should take it to a dealer and get them to flash the logo back out and ask them to change it to a normal text logo so you can program it yourself.
