If the warning light says "chg oil" the meter is telling you it is time to change the oil. The meter will automatically re-set after 6-8 hours of run time. It cannot be manually re-set.

Sounds like a Safety Switch Issue.........Check the Seat Switch.......The Arrow Indicator is some sort of status warning......Maybe a Neutral Transmission Indicator.....A Low Oil sensor can shut down Engine, if the Oil Level is not Correct......This Mower is Complicated and Access to an Owners Manual is Highly Recommended....Jumpering Safety Switches will result in a Personal Injury and a damage to Property Hazard....................

I have an ST2046 snapper riding mower. I changed oil and oil light still will not go off.

Sometimes mowers, like cars, are pre-programmed to display service interval lights after X number of hours. You may have changed the oil just before such an occurence. I'd give it a few more running hours and it should turn off. Check the manual regarding the oil change interval and the warning light.

Why would the oil light stay on?

That depends on the type of oil warning light being displayed. There are 2 types of warning lights

1. Low oil pressure light which all cars have
2. low oil level light which some cars have.

Low OIL PRESSURE warning means the oil pressure is below minimum and when this happens there will be insufficient lubrication of many engine parts because sufficient oil cannot get to all parts of the engine it is required to lubricate. Until the cause is identified and rectified the warning light will remain. If you run your engine with low oil pressure you will cause expensive damage to internal engine components.

Low OIL LEVEL warning means the oil in the sump has dropped to a dangerously low level (which may be due to an oil leak or abnormal oil consumption by the engine.) This warning means the oil level needs to be topped up and the warning will stay displayed until you top up the oil. Running the engine with low oil will cause expensive engine damage.
Since it is a 2 minute job, Oil levels should be checked fortnightly as a minimum, together with radiator coolant and power steering fluid levels, if you run the car most days each week as most people do.

It is possible for a warning light to remain displayed when the cause has been dealt with because there is a problem with the sender unit. However it needs to be established with alternative checks that the problem has been fixed before investigating if there is a problem with the warning light itself.

One of the dash warning lights stays on and we don't know what the slight refers to

Check your user manual, It will explain all warning lights, you don't list make or model , so it is hard for me to help, most lights show a symbol to help, oil can for oil pressure, battery for charging, thermometer for over heating and so on.

2000 Mitsubishi eclipse the oil light came on and my car shut down. I added 1 quart of oil and it was full but the car still won't start.

The oil light does not indicate the car is low on oil (based on your discription) it indicates the oil pressure is low, the no start is most likely due to this low pressure and the fuel pump has been cut off to prevent damage to the engine from low oil pressure. Please have a shop locate the cause of the low oil pressure warning and repair it as needed. It could be a false light or a real one, which means if you drove it very far you may have damaged the engines bearings.
