Set with the camera's Digital Print Order Format (DPOF) function. Set [Date] option to [On] in [Print Settings] in the Print menu.

Check to see that both cameras are set to the same settings. For example, turn both cameras to manual and set them both to the same aperture, ISO, and shutter speed. This could account for the difference in brightness if one is set to be more light sensitive than the other.
From the shooting menu, select "Color." You can select "B&W" for black-and-white, or "Sepia" for the old-fashioned brownish look. For full details look in the manual under "Shooting menu."
