The unit is cooling fine as long as the compressor is on, but the compressor will not stay on long enough to keep the camper cool during the day time. could this be a thermostat issue?

how old is unit and does it have refrigerant in it
SOURCE: RV air conditioner. Compressor running, fan stops before cool
The fan motor is getting hot and going off on the internal overload in the motor.
This is caused by either a low voltage, a bad capacitor, or tight or dry bearings in the motor.
To check the bearings turn the power off to the unit, then spin the fan blade if it spins freely then the bearings are ok.
To check the capacitor you will need some kind of tester or you can buy a capacitor and replace it, that's what a lot of people do. They usually don't cost very much.
To check the voltage you will need a voltmeter and measure the volts at the unit.

you are right the problem is with the thermostat. if this is an all-in-one unit there is a wire that runs from the thermostat to the front of the evaporator coil where the air returns to the system to be cooled. you can try to move the wire further away from the coils and see if it prevents the unit from short-cycling. btw it's not very good for the unit to do what its doing now, as i'm sure you could imagine. if its a separate thermostat i.e. one that runs on 24V and has wires running to the a/c, then just replace it with one from Home Depot and you should be good to go. if it's other than 24V then you will likely have to get a replacement thru the a/c's manufacturer.

When the cooling slows down, but water is still running off, usually something is icing up. You can turn the unit off, and let it thaw, and try again. Sometimes, if the humidity is high, this is more pronounced. It sounds like you are low on refrigerant. That implies that you have a slight leak. You should have the unit serviced, and the leak repaired.

SOURCE: sometimes compressor does not kick on
It sounds like the coolant charge is marginal. There are sensors that can monitor the pressure levels and can disable the compressor to prevent damage to it. You need a tech to check the system before you lose it completely. Figure on $100-120 cost for check and recharge if needed.
