Just get over it, it's not important. Get a hearing aid. It's most likely your ears have aged and the alarm is just as loud as before. What?
It's also possible that the little noise maker has a hole to allow the sound out and has become clogged with dripping pizza, chicken fat, grease vapors, or because it's an electronic device in a hot box it may need replacing.

I have a Simpson 63-616 oven and would like disable the timer and alarm

Normally, it would just be a case of buying a new timer, but this model is so old, very few spares are available. You would need to look at the wiring behind the timer and see if you can just bypass it altogether. You could try Simpson / Electrolux direct for a timer, wiring diagram, or suggestions. Contact details are in this page.

Oven keeps beaping and has a alarm symbol showing

Sounds like the timer was set and time is up, the issue is whichever model oven it is has a specific way to stop the alarm. Some just require a simple pressing "cancel" while others use a combination of buttons. I would try pressing either the arrow up or down, if not present just press the "timer" button, see if the alarm symbol changes or disappears

My Hotpoint BS22 electric fan oven timer alarm has gone really quiet. How do I turn the volume up??

You can't unfortunately. It sounds like the control board is starting to fail. I would suggest having it repaired before it completely fails. Therepairshack.com offers a service that can fix this for you.

Alarm on NEFF U1721

It might be the volume control.

Try pressing the minus button a few times. The loudness should cycle between low, medium and high.
