Last night I set for 365 and next thing I knew it was very hot and a fryer thermometer showed upwards of 400 deg. Is there a part that can be replaced to fix this problem?
I would try setting it for 300 and watch where it goes. If it goes above 375 turn it off. If it does it may be possible to calabrate the thermostat. If not replace it. I do not know this unit.

If your timer is connected to the t'stat, you may have an expensive project on your hands. However, in the meantime, I would just get an egg timer or a digital countdown timer and use it since it seems to operate fine without the timer.

there are no inside parts made for this unit , you might call home shopping channel there might be a service center somewhere . if anyone would know its them

If the thermostat can not regulate the oil temperature anymore, that is the time to replace it with a good one.
