When I change the voicemail greeting in the phone and play it back, it's my recording, but when I call the restaurant and let it go to voicemail, it's still the old voicemail message. I have looked up everything and am pretty sure I'm doing it right, it just wont save outside of the physical phone

Use the dial pad buttons to enter the hour. You must use two digits for
all hours (i.e. "08" for 8 o'clock). You will be prompted to enter AM

After you have entered the hours, select NEXT. The display will show
minutes as 00. Use the dial pad buttons to enter the minutes. If you are just changing the time, press the
RELEASE (RLS) button to end your session. The time will be changed and
the date will remain the same.

The display will show 99 as the year. Using two digits, enter the year using the dial pad buttons (i.e. "05" for 2005).
Select NEXT, and repeat to change the month and the day.

Once you have entered the day, press the RELEASE (RLS) key to end your session. This will save the changed time and date.

press Grtg
press Grtg again
press 1 then ok.
Greeting 1 is usually for day and 2 is usually for night depending on the tech who set it up.

This may be specific for my system, but hopefully it helps:
Connect to your voicemail (for us, we can either hit the voicemail button or dial 1650)
Once in, press #6, it will ask for a mailbox number, dial *9998, it will ask for a password (the default is 1234#)
Press 5 to modify messages.
Press 3 to record custom service menus.
It will ask you to pick which menu (1-100). Our day menu is 1, and night is 2. I'm guessing yours will be the same.
From this point, it becomes the same as recording a standard voicemail
greeting. It will play the current greeting and you can press 1 to
re-record it. Do so, and then press #. Press 2 to accept and you're
done!
