Turn off hydro to heater and drain it. Be sure to refill heater first then turn hydro back on so you don't burn out element. If gas, shut it off as well, and drain and fill same as hydro/electric .

The gas valve dial, which is in front of the heater near the bottom, will say "Vacation" mode. Just line up the pointer with the word vacation. Some models no longer use the word "Vacation", replaced with "Low or Warm". It will be the setting just before "OFF"

Since it will not be boiling it will not lose any water, however I would be concerned about the low temperatures allowing mold or Legionnaires in rare cases to grow, I would call a local plumber for their opinion as to drain or not for your area.
I would drain it and leave it open at the drain and the T and P valve if possible.
