First, if you want to know why the brand is so expensive you may want to watch this demonstration of a Rolex Submariner being disassembled. The video shows intricacies involved in the making of the timepiece in exquisite detail.
The demonstration is, of course, performed by a professional watchmaker, who meticulously picks apart the watch with great skill. It goes without saying, unless you've managed to get one for free, you shouldn't try this at home

Try these guys for a manual; http://www.timemerchants.com/catalog.htm They have the 2000 daytona manual and several older ones available. Otherwise try your local Rolex dealer; http://www.rolex.com/en/collection/rolex-gallery/cosmograph-daytona/specification.jsp#/en/xml/inside-rolex/sales-service/affiliates/index Hope this helps :)

Rolex does not engrave the case back. If it says 24 hours at Daytona, or wording like that, the watch is not real... It's a fake, or as we say more kindly.. It's a replica, and can be bought on any replica watch web site for $30 to $80, for an automatic mov't., 21J, made in China.
Also, the sub-dials will not function on this watch. A Daytona needs the proper movement to operate the chronograph as it was intended..... To act as a stopwatch.. and measure time... seconds, minutes and hours. This is done by activating pushers at 2 and 4 positions, and the pushers on 21J replicas just don't operate a chron. for the purpose of measuring time. They may move and measure something else, like military time, or the date, but definitely not record seconds, minutes or hours.
There are also no manuals on how to operate the Daytona that comes with these replica watches. You should know how this watch functions and how to operate the pushers, and what they do before you should buy and enjoy this type of chronograph watch. It's simple, just take the time to ask people in the know... how the daytona works, what the sub-dials measure and how to use them, etc. In no time you'll understand the operation of this beautifully made watch. Unfortunately, a daytona is out of reach for most of us... That's why seeking out a quality rolex replica for much less money is the way to go if you love this watch... A quality one can look, feel, and function just as good as the authentic Daytona, and you won't have to out out over $10K to get one.

SOURCE: winding and setting the time on a rolex watch
There isn;t any downloadable manuals for Rolex watches, but operation of Rolex Day-Date is very simple:
1) when you unscrew the crown, it is in winding position,
2)
when you pull out the crown to the first click, it is in day and date
setting position (depending wich way you turn the crown).
NOTE: to
adjust the day or date, previously you have to advance hands forward,
passing 12 o'clock (midnight) mark and stop advancing at 4.00 a.m.
using the crown in position as described in chapter 3. When done - push
the crown fully in, then pull out to the first click and only then
adjust the day or date.
3) when you pull the crown further out to the second click, it is in time setting position.
To
find the daytime or night time on the watch: pull out crown to the
second click and advance watch hands forward till you pass the 12 mark
on dial. If the date changes as you pass it - it is the night time
(midnight). If the date do not change as you pass it - it is the
daytime (noon).
After all settings being done, allways screw the crown back down as it protects the watch from water and moisture.
Never use watch in sauna- it's not designed for that.
Do not forget to rate, please.
SOURCE: I had my Rolex watch serviced 2 years ago By Rolex and now
Either the stem or latch needs to be replaced. It's a common problem for ALL manual wind watches.
