Machine model will be needed. Continuously running pump would an indication the timing mechanism is not advancing. Sensor problem perhaps.

The manual is not redundant. In other words it shows the cold info and not the hot. However if you look at the entire manual it shows both functions and starting on page 10 shows the hot wash sequence of events.
I found similar Kenmore dishwashers on Consumer Reports with around 135 to 145 minutes for a normal wash cycle and around 5 to 6 gallons per wash. A quick wash would take somewhat less, depending on the model. But not much less. I think you are OK. Because dishwashers are using less water these days, they count on longer wash times to produce the same effect.
