Our fridge / freezer is freezing everything, milk is frozen. Thermostat knob is down to warmist (number 1) and still everything stays frozen. We emptied out, defrosted and left off overnight, turned back on next morning, by mid afternoon the milk had frozen again.

If the fridge is freezing everything, try this before thinking it's the
thermostat first turn down the temp gauge in the freezer, not fridge to about medium, still a bit to cold turn down a little more. It save me heaps
This is a drawback of most mini-fridges. Start by defrosting everything. Then fill ice cube trays with water and keep lowering the setting until the water freezes. Just go a little lower, no more. Fridge should not freeze food. If the fridge stays closed all the time food will freeze. Also if the freezer element gets ice buildup it must be defrosted. Not automatic like home fridge. Most kids today weren't born when the last fridges that had to be defrosted were in service.
Icecream is a tough call. Some brands have to many artaficial ingredients and that doesnt get solid. What temps are you getting in the freezer? Is everything else frozen solid?
If the fridge side is frozen you have a door seal issue. If the freezer side is frozen you have a defrost component issue. Your post was not clear as to which side is frozen.
try to call a technician the defrost system of Ur fridge might be damaged or u have a leak of gas on ur system.. tell him to check the thermostat.. also
not a breathing room issue, if anything that would cause it to shut down and not cool at all, where you got just the opposite, it never shuts off. is it an electronic model, or is there a control knob you manullay turn to adjust temp
