We have a 11 x 19 brand new walk in cooler. All of our cake products are dripping with water. Humidity is at about 97%, which we know is too high. We can slove this problem Any ideas.
For cakes your humidity level should be around 95-100
elative-humidity.
For casings your humidity level should be 92h dropped to as low as 82h during
fruiting.
