Trouble code P0128 means: ECT Sensor Below Thermostat Regulating Temperature
Does the water temp gauge in the dash work? I'd be willing to bet it doesn't. Turn ignition on, check for voltage
at water temp sensor harness. If voltage is present, replace water temp
sensor. Check the air temp sensor also. If there's no voltage, find out
why. Maybe both sensors are on the same harness on this truck and it
has become disconnected somehow?

Yes my temp gauge works and it never goes over 180
OK... EASY FIX... Replace your thermostat with a 195..... What is happening is your Current Thermostat is either STUCK OPEN or is too low. Have you replaced your Thermostat prior with a 180? Put in a 190-195 ( I prefer to install a brand called FAILSAFE. If there is EVER a problem, it is designed to FAIL in the OPEN or SAFE position. I am quite sure this will fix your issue.... REPLACE THE THERMOSTAT
