If you download images from Vivitar 785HD using Plug-and-Play, date and time are related to the creation date of the memory chip. Use Vivitar software, image time will be correct. If you use Mac OS X 10.9.2, iPhoto will allow you to change date and time on images either individually or batch.
I just got my third 785HD (first two were defective from Staples). It works fine. Vivitar help line has prompt response,

Go into the Camera's Menu settings, scroll through the settings to Set the Date & Time.

,,,push the "square" button in the middle of the direction arrows.
..press the right arrow across untill you come to Date and Time
...press the down arrow to select the "set" and press the square button again
....use the up and down arrows to select the correct date
....use the right arrow button to set the month and day and so on.....
Also, if you don't want the time displayed on the picture, just select "no display".

The standard canon 75-300 lens is not considered a "fast" lens. Because of this, when zooming in on objects you are actually reducing the amount of light hitting the image sensor. Fast lenses cost $$$$. Just google "Canon L Glass" and you will see what I'm talking about. Try opening the field of view (zooming out) to allow more light to be absorbed bu the image senor. Crop your subject later in whatever software you use. You can also use one of the manual modes and up your f-stop to make the camera more sensitive to low-light conditions (higher f-stop means higher film speed.. higher film speed is how fast the "film"... aka image sensor absorbs the light. for action photos, faster film speed is key!!). have fun experimenting.

When you turn on your camera, press the menu button. That will bring up the screen that has the orange buttons at the top (Capture) (Setup) arrow down using the buttons on the far right side. The down button will be the dame button that you use to delete pictures with. When you get to the botton of the page continue arrowing down and that will bring up another page. Arrow down until you get to the botton there are only 3 items on this page and the bottom item will say the following:
Date imprint ON
Press your enter button (ok button) and up will pop ON or OFF.
Arrown down to the OFF and press enter and that will remove the date imprint from your pictures.

This camera is an inexpensive camera that takes great videos. But it doesn't have a dedicated shutter for taking still images.
You are going to find an increase in picture quality if you hold it very still, perhaps use a tripod, or put it on something stable to take the picture. Also, make sure the you have plenty of light for your subject when you take the picture.
There is not setting that you can change to fix this. Sorry, it's not what you wanted to hear, but don't let it stop you from rating my solution a fixya.

Called Vivitar, this model does not support setting time and date. Its a cheap little throw away that apparently no one thought we would ever want to know the time date we took a video. Won't be buying anything from Vivitar again.
