The symbols are ICONS. Each represents an application or access to a function which is part of the capabilities of your device. If you look through your settings you may find an option to display text titles along with the icons, or change the view of the "home" screen to a list, instead of just icons. List will have name and possibly a description of the application. If you read the book that come with the device, or seach for a downloadable book if you don't have one (google your model number) that will help you tremendously in using your device.

do you mean you want to underscore?

To underscore, while typing the email, or message on your Nokia E63, press ctrl and list of symbols will appear on your screen. Amongst the symbols, you will find underscore there.

Ctrl is the first key at the right down part of your phone.
