Select the function on the far left knob. Select your temperature with the knob second from left. Select the cooking time with the knob to the far right.
Don't know how long ago you posted this but I have the same issues! The left hand dial deals with function and the fan oven setting is 2nd one. The grill setting is the furthest one round...I think. The right hand dial is temperature. 180 is at about half past. 200 is at about 40 mins past if you get my drift. All this I have kind of figured out through trial and error... Now I've just got to figure out how to change the light bulbs....
The Regal switched it's temperature control module look around that time So it couple be one of two options.
First is the older "slide" type module. For this you move the top of the two left to right functioning settings all the way to the right to engage the defrost and the bottom one all the way to the right to engage the heat.
The newer ones have knobs that turn in which case the knob on the far right turns it all the way to the right to engage the defrost and the knob in the middle to the far right to get the most heat.

Well, must confess, we had this problem once, after cleaning all the knobs. We put them back, reversing the two temp knobs. The correct placement, we found, was the left oven knob, since it is not self cleaning, does not have the word CLEAN. This is the far left knob. Next, from left to right, appearing very simmilar, also with temps 200 to 500, is the right oven temp knob, which does say CLEAN. Third from left is the right oven function knob, with CLEAN, Time Cook, etc, and no temp numbers. Hope your fix is this simple. Hope your cooking is looking good cooking.
Yeah just turn the left hand knob to the one setting which isn't a cooking function - I think it looks a bit like a dash - and then power up as normal on the right hand knob.
It happpened to me but you get the hang of it and it's not a fault.
