UL2494ECW3 is the model number. The commercial freezer is about 10 years old and we lost the manual. We need to defrost and arent sure how exactly to do this. Should we open the drainage stopper on the bottom...if so how do we empty it. Should the freezer dial be ON while the SUPER DEFROST button is pulled out? Help!

I must've paid for my fridge to be fixed by a local guy 3x before finding RepairClinic. I just turned it off and pulled out the super defrost button. I used towels not the drainage plug since I couldn't find a pan of any sort.
