First, I'm not a PLATNUM tech. Your should call your vendor for service. Check warranty!
*** The following is for information only. ***
* Coupling is the direct connection of the electric motor shaft to the pump. Coupling will break from some of the following conditions:
* No oil (in pump). Over heated and froze up piston in vacuum section. Pump needs rebuilding/replacement.
* liquid refrigerant / oil going to pump. The system still has pressure? Vacuum pump is to remove left over gases after system has reached outside air pressure.
* If pump is being used to recover liquids then there needs to be a liquid separator before the vacuum pump to prevent liquids from getting into pump.
* If this pump/motor was serviced and not aligned when coupled together. The coupler may handle minor alignment problems (depending on type of coupler) But you should check it if your having problems with the coupler getting loose or cracking. (it can also be a bent shaft.) Check bearings while your at it.
* Final; Check your warranty BEFORE working on this type of pump.

If your seal or gasket failed and water penetrated into the motor cabinet how certain are you that whatever you have done has actually remedied the underlying issue of the pump being grounded?
A new M53 is ~$125 - $150 and the oil is not something you can walk into the hardware store and pick up off the shelf. I'd want to be certain you have fixed the ground first. Having worked on these in the past it is unlikely you are going to fix anything wrong with the winding, especially for less than a new unit.
If all is OK and the oil is all you need ask around at local pump repair shops for 10 or 20 weight non-detergent pump oil...they should know what you want and if they sell it, you should be all set. As for the amount, pour it in slowly until you see the winding is fully submerged. You need to leave room at the top to allow for thermal expansion of the oil.
Have the vehicle properly diagnosed... it could very well be the oil pump - don't risk burning up the engine by oil starvation... get someone to check the oil pressure.
For change vacuum pump oil follow the bellow step: Press main
menu then keep pressing up or down arrow key till display show "CHANGE VACUUM OIL" then press "YES" key. Now vacuum pump will
run for two minute & stop automatically. When pump stop you just open the
oil drain cap and drain all used oil from pump (oil drain cap located outside
of the machine near high & low side hose). After draining all used oil replace
oil drain cap and fill 5 ounce new ROBINAIR vacuum pump oil then press "YES" key and keep filling oil up to middle of sight glass of vacuum

Sounds like it could be a sludge issue which can be caused from using the incorrect oil. It is a very specific synthetic type of oil that VW suggests and when you don't use it the engine can actually 'gunk' up and cause turbo failure. (This problem happened when a non-vw dealer sold me my car with the wrong type of synthetic in it and my turbo seized)
