Seiko automatic watches such as the Seiko 5 do not change dates at midnight, they spread the changes over several hours to minimize the power needed from the spring. As the spring ages, it may not have enough power to finish the change depending on how much you move your hand during the day, you could wind up the spring by shaking it for several minutes before going to bed or using a winding machine overnight. You could also just replace the main spring but repairing a Seiko 5 often costs as much as buying a new one. Note, if your watch is running fast, have a jewelry store demagnetize it.
I solved this problem by following the "hand position adjustment" instructions in the owner's manual for my watch. In my case, the position of the 24 hour clock hands were not pointing to 12 o'clock, so the day and date would switch at a strange time of day.
Main cause would be that the date gear teeth have been stripped. This is done by setting the date whilst the hands are trying to change the date themselves (between 10pm and 2am). Always adjust the date with the hands around 6.0clock. You will need to return your watch to where you bought it for repair I'm afraid.

If your watch stopped working while changing the time it can be for a couple of reason . One is i never set the watch between the hours of 11 pm and 4 am or else your movement can be damaged. The main reason is usually that the watch crown was not pushed all the way in to the first set . If the watch crown and stem is pulled out and not in the start position the watch will not run. Also after setting time you might need to reengage the watch by pressing on the jumper buttons on the top side of the crown they look like push buttons.
