Don't
bother trying to replace the CR1616 battery yourself it is a
sealed unit and once the seal is broken you can replace the battery but
it will fail very soon with steam ingress even if you superglue it.!!
It sounds like the adapter was screwed in at an angle. This causes the threads to cross in turn making it near impossible to unscrew. Since it is plastic I recommend buying a new adapter. I know it's unfortunate, however it is a lost cause.
From the description of this model's replacement filters, they appear to be carbon filters. What you are seeing is most likely bits of carbon granules from the filter media (which doesn't say much for the construction quality of these filters). I would suggest getting an inexpensive countertop or under-counter filtration system instead of using Brita pitcher filters. These systems usually come with both carbon and sediment filters and if you get a non-proprietary one (i.e. not a system off the shelf at Lowe's), the filter elements are a lot cheaper to replace.

But, Brita filters are not the only filters on the market. There are better Brita alternative filters.
