2007 yamaha v star 1300 idle is to high and fuel mixture to rich

When at idle seems to be running to high pull spark plugs and are black new spark plug were put in 2 months ago. idle will go up and down on its own with out me touching throttle.

Your bike's engine needs a good tune up.

The black smoke means it is running a rich fuel mixture. first try a new air filter element, and oil change(incase fuel has flooded the sump).

Your best bet is to purchase a shop manual if you plan on keeping the motorcycle and perform repair and maintenance on it.

About 2 to 2 1/2 turns out from GENTLY seated. Don't forget this is only idle and low speed air / fuel mixture.

My 2001 yamaha 1600 roadstar backfires and cuts out just before I shift. It idle fines. it runs good between gears. It cuts out just when it get up in higher rpms, just before I shift.

Backfiring and cutting out liike this is probably a symptom of one or both of the following: too rich a fuel mixture, or too weak a spark. Take your spark plugs and see if they tips look tan or black. If black, your fuel mixture needs to be leaned out. Another possible cause is a dirty and or clooged air filter, which can reduce the air flow into the engine. Take it out, bang the dust and debris out. If it looks really dirty, replace it -- they're cheap. If your spark is too weak, you may also notice a loss of power, especially at higher revs. If none of these seem to be the culprit, have your ignition timing checked.

Black plugs/missing at high rpm's

You're either running too rich, or plugs that are too cold.
My first guess, from scanty info: you've changed the exhaust pipes, are running too lean on top (need a different main and maybe needle and cutaway, too) and "fixed" the mixture with as screw on the carb that just adjusts idle mixture.
Stock exhaust? Check the airbox/aircleaner for restriction. You may also have a torn/perforated CV diaphragm in your carb (unlikely in a bike this new)
