I'm considering a Vita spa and a Marquis spa. The Vita spa's owner's manual looks like it requires much more upkeep. Is this true, or is the Marquis spa manual just minimizing the amount of work?

There will be the same amount of basic maintenance on either spa. The difference will be in water chemistry. you definitely want an ozone generator on either spa. Both are awesome Mfg of spas. they both have been around since the 1980's
Ozone will keep the water cleaner, fresher smelling and reduce the total amount of traditional chemicals used in any hot tub.
There are many other solutions for taking care of water chemistry out there without using the traditional types.

a 6.5hp motor produces quite a bit of force. It should be able to support 30 jets just fine. Most spas range from 2hp to 7hp. Depending on your preferences, the 6.5 should be plenty but if you really want a powerful therapy jet, two 7hp pumps should be more than sufficient. They will also kick your electric meter up a few notches...
Two pumps give you more options, you don't have to have half of the jets turned off so one area can have more power, the dual pumps give you the option to run nearly all of the jets at the same time if you have more than just a couple people in the spa a once.
