I Have Onkyo HT-S3400 and when I connected it my recently purchased Blu-ray player (Sony BDP-S190) to it with HDMI cable the only display I see when watching a movie is DTS or Multi-CH or PCM 5.1. I do not see the DTS-HD Master Audio or Dolby True HD symbol symbol on my receiver's display screen. But it is showing in television as Audio format is DTS HD Master Audio while Blu-ray player is connected to tv. And I can choose from other listening profiles set by the receiver but none of them are Dolby Digital or DTS. Is this the setting I should be getting? Or should I be seeing the Dolby Digital and the DTS-HD Master symbols appear on the screen?

I am going to take a stab in the dark here...
Did you plug the hdmi from the receiver to hdmi via the monitor hdmi output? this is needed so when you change the device on the receiver ie. between setop box and dvd the monitor changes with it accordingly.
You may also need to go to the setop box to set it to use hdmi output at the right frequencies too..ie. 720p 1080i or 1080p.Also set it so it only sends the picture via hdmi but audio still with optical out.

This model requires an additional audio input either optical or coaxial from your Blue ray player to the receiver. The HDMI input is not enough.

tryed that still not working been told that the player will not send bitstream audio only to the receiver there for it decodes the signal on board the blu ray player so the tru hd light does not light up.

Yes! You can pass the video signal through the receiver. This is most useful when you have more than one video device (e.g. DVD, cable box, VCR,...), and you can use the receiver to switch to the audio and video for the selected source at the same time.
On the back of your Onkyo HT-SR800 there is a section labeled "Component Video." It has three inputs and one output. So, attach your DVD by component cables to the "DVD In" and then attach component cables from the "OUT" receiver connection to the TV.
If your TV doesn't have a component connection, then this addresses your other question. You can't gain anything with this, because your TV doesn't support it. Connect the DVD to the TV according to the highest quality connection that they both support, in this order: composite, S-Video, component.
If you are using composite, but they both handle composite, than yes, you will get a better picture by going to component (or even S-Video). If both devices support progressive scan, this could be a substantial difference.
Your receiver accepts component, s-video and component video, but keep in mind, it may not do "video switching." So if you connect the DVD in via component, but go out to the TV over composite, then you may not get any video at all (but feel free to try). Try to avoid this, but you may be forced to try depending on the limitations of the various devices that you are hooking up.

Even if you update the firmware of yoour Sony PS3 it is not capable of sending out TrueHD or DTS Master audio formats bit to bit. That is the reason why you are not able to choose TrueHD or DTS Master from your listening mode. The only time you will be able to choose these modes is if the receiver receives these signals from the source. To know what signal you are receiving, you can press the "Display" button in front of your panel. When you do that I believe what it would give you is PCM which is uncompressed audio.
