It sounds like its your Catalytic converter is bad on your exhaust system, and that creates back pressure from the engine

180 is actually on the low side for a factory temperature setting. An aftermarket performance thermostat can be a 160 or 180 unit. 190-210 is a normal range, 260 is when you need to be concerned. Water/coolant in radiator being hot is normal! That's why you're not supposed to open the cap after the car has been running, wait till it cools off. Not sure on you're problem, more details?

Agree temp range is normally 190-210. The drop in power could be due to several things. I would check the fuel pressure possibly the fuel regulator has gone bad. Also fuel filter if you push the throttle and the engine reads that it's going to call for more air and fuel so if one is restricted in some way then you will starve on one and the engine will shut back. A vacuum leak will also cause this. Is your vehicle running a little rough at idle ? Also indicator of vacuum leak.

What makes it not accelerate after a long drive?

lost power, hot/
lots of reasons.
i can list 50 bad parts. or more........
but wont. we do the tests and let the chips fall.
so if the RPM of engine rises, fast , and not car.
that is tranny slip
but if its not tranny slip, then its lost engine power
which is it, we drive car and see that in 1 second.

Loses all power after hitting certain RPM

Not sure what vehicle you are talking about, but I have seen this happen with a dodge caravan that had a poor camshaft sensor. Replacing it cured the issue.
Also, the catalytic converter could be falling apart inside. At higher RPM's the chunks will block the exhaust flow and cause a loss of power. Severe loss of power. I have seen this many times.

Hydraulic fluid temperatures above 180°F (82°C) damage most seal compounds and accelerate degradation of the oil. While the operation of any hydraulic system at temperatures above 180°F should be avoided, fluid temperature is too high when viscosity falls below the optimum value for the hydraulic system's components. This can occur well below 180°F, depending on the fluid's viscosity grade.
