I just bought a stopwatch to time myself running. How do I use it?

Hold the stopwatch in one hand and use your thumb to press down a few times until you have cleared the previous time. Once the stopwatch is reset, you are ready to use it. When you are ready to start running, press the button and the top down with your thumb. When you have finished press it again and the time it shows is your timed run. Repeat the steps when you are ready to time your next run.

Ultrak 495 Stopwatch. The one I have has paddles and now I can't get it back together. There are three bracket type things that I don't know where they go and without them in, the paddles don't work.

Send it back to them and request a free repair. No one in their right mind tries to take apart an electronic stopwatch. It is a precision instrument. :>D

Can I record multiple times using a stopwatch?

You can do that if you have the "split" feature in your stopwatch. For example, if a runner is running an 800 meter race and you also want to measure how fast he runs the first 400 meters, you can click the split button after 400 meters. Then, you will have the runner's time for both the first 400 meters and for 800 meters.
