We have to turn it off by hand. The blue switch is not super bright so one must make sure the switch is in the down position when done boiling water. This morning the kettle was super hot with no water in it, it stayed on over night. I would think this was faulty product but my parents kettle does the same thing, they always turn it off by hand. But the specs say it should be automatic!

I think your kettle is having a switch problem. The switch is failing that is why it turns off and on by itself.
Also, there might be some sort of partial contact in the kettle which is causing it to connect and disconnect at interval. Heat from the kettle can cause wire(s) to melt....
You will have to get a Philip screw driver, open the part of the kettle where the power wire enters with the screw driver and make sure all wires are firm/intact....
