This may depend on the signal source of the TV. If you are watching OTA TV (or your TV is interpreting the CC from the cable or satellite signal), then use the CC button on the remote. Alternatively, depending on your exact model Hitachi TV, try using the menu to find a Tools or Options sub-menu and then turn off the CC from there. This could be under a different menu item. If you add a comment with your model number, I'll be glad to give the exact menu steps.
If you have a set-top box (cable, satellite, digital-to-analog converter box, DVD recorder), the captions may be turned on at this source. Then you will need to disable the captions from that box. With a converter box, press the CC button on the converter's remote or enter the menus for that box.
With a Dish TV set-top box, press Menu on the Dish remote, go to Properties (item 9). Click Select and then go down to Closed Caption (item 6), and press Select again. The first item in this sub-menu lets you turn on and off the captions. Press the left button and then up or down arrow followed by Select to change the setting. For other sources, check the instructions for that device or add a comment with the specific source for a solution for that device.
I hope this helps.

(the Dish CC procedure is for the box I have to deal with; I can't guarantee that updates/model changes have not changed the procedure.)
