    I have a mongoose xr75 racing elemen When I was riding it 30 minutes ago by the way it is a 21 speed with 26 inch rimingThen the ball barrens went out on both wheels what should I do

You have to screw the cable adjuster all the way in for starters. Then you pull the derauiler all the out to the largest sprocket nearest the spokes and tighten the cable down here. Now there are 2 adjusting screws that limit the travel and adjust these ever so slighty as a little goes a long ways. Shift therough the gears with the bike inverted is the best method while doing all of this. You will be able to make the adjustment so the derauiler goes from the largest to smallest sprocket by these 2 screws if done properly. you may eventually have to tighten the cable adjuster also in some cases for proper travel.
Better off if you let a shop do this if you go tofar you can throw the derauiler into the spokes and mess everythign up BIGTIME for the few $$'s it amy cost ya. GOOD LUCK

I have a SRAM 3.0 rear derailer. It is difficult going into the two largest gears, I have a 7 speed cassette. I notice there is no barrel adjustment on it. Any suggestions

The barrel is for fine tuning the indexing among the gears. Limit screws set the inner and outer physical swing of the derailleur.

A simple web search for "Sram 3.0 Mountain Bike Rear Derailleur adjustment" finds the manual.

Derailleur. Everything on a bike that bolts on can be replaced. Take it to a bicycle shop for assessment. Special tools are involved.

SRAM Rival Rear Derailleur stays on the large rear gear when shifting from low to high gears. Sometimes the gears doesn't seem to change at all. I've already taken the bike to Performance bike shop...

adjust barrel on rear mech clockwise till gear shifts click brake lrver for next gear repeat same as before with barrel. If this fails stat from bottom og cassette but adjust barrel anti-clockwise to obtain gears.

Have a mongoose with single rear derailleur - how does the shift work?

You have a 21 spd and you have two derailleurs, one front and one rear. To shift you must always be pedalling forward, not backwards or you can chip teeth on your chainrings and cog. To shift, remember left hand controls front, brake and derailleur, the front derailleur is what gives you the ranges, gears closest to the bike are the easiest, so, small ring it the front are your easiest range, middle, mid range, large hardest but fastest. It is best to remember that it is the number of teeth that are hitting the chain to give you the speed you want. Rear Derailleur is your fine tuner the largest is the easiest, same as above. NOW DO NOT KITTY CORNER YOUR CHAIN, SUCH AS LARGE COG IN REAR TO LARGE IN FRONT CHAIN WHEEL, AND DO NOT USE SMALL IN REAR TO SMALL IN FRONT CHAINWHEEL. The reason you do not do that is: you can stretch your chain, yes you can stretch your chain and it serves no purpose, if you are pedalling to easy change your range(front).
