I have moved house and become the owner of a Paul Bocuse RBC 127 range cooker. Unfortunately, there is no manual to explain how you actually cooker on it. Can anyone help please?

Unfortunately is is not a well known model and is very old. The first website in the link is known for 'bait and 'switch' but there is a helpful post in the Comments. The manual in the link is actually an Oster Bread maker. They do this all the time!
Not everything can be performed by the family handyman.
This adjustment is best left to a qualified service tech. The last thing you want to do is make a mistake and burn somebody's face off.
