I HAVE A Imperial IFS40 Deep Fryer THAT I HAVE REPLACED THE
GAS VALVE,T'STAT,AND HI-LIMIT SWITCH IN. MY PROBLEM IS THAT YOU CAN BE COOKING AWAY, AND ALL OF A SUDDEN THE UNIT SHUTS DOWN (EVEN KILLING THE PILOT LIGHT). WHEN THIS HAPPENS YOU CANT RELITE THE PILOT FOR A FEW MINUTES. THE PARTS REPLACED WERE NEW FACTORY IMPERIAL PARTS. I AM AT A LOSS TO FIGURE THIS PROBLEM OUT.

Hi there, it sounds like your thermopile, for the pilot, is failing during use, when this happens, the small DC voltage it generates is less than the gas valve requires to stay open, and shuts off the pilot, which shuts off the main burners. Another thing that could be happening, is the hi limit is opening prematurely, instead of shutting of the pilot at 450 deg. it now is opening at 325, or 225 or 250. Sometimes the sensing bulb gets broken where it pass's through the oil tank causing this symptom. If you temporarily bypassed the hi limit to test this also, and it still goes off, you need a thermopile. If it stays on, check your temp with a reliable thermometer, and see if it reads fairly close to your setting, if so, then you need a hi limit. Hope that helps, and thank you.
Try to clean the pilot orfice,ive seen even though the pilot stays lit it doesnt have enough millivolts to energize the gas valve.Did you check the wiring really good?
IT IS A GAS PRESSURE PROBLEM CHECK TO SEE IF THERE IS A GAS REGULATOR IN LINE WITH THE GAS PIPE TO THE FRYER IF SO ADJUST REGULATOR TAKE TOP ALUMINUM SCREW OF YOU WILL SEE WHITE PLASTIC SCREW TURN WHITE SCREWW TO THE RIGHT ALL THE WAY IF SAME PROBLEM OR NO REGULATOR RESTICTION IN GAS LINE
If you have a manual thermostat,(inside door, knob) your part is

Make the "tap" is to the thermostat, and not the gas valve. If it is the t-stat, try cycling the knob back and forth, low to high several times. This may free up the contacts in the t-stat. But in general, if tapping "fixes" it, you need a new one.
