Ot took me a bit to sort out your model number started with 106 for a complete model number of
106.57562792.
You already more or less stated what the remedy is. in this starement:
It is like the sensor value does not know when to stop sending water to the tray
What happens during the life of refrigerator is the inlet water valve fails. This caused the ice in the water fill tube because it was a very slow drip so the wter froze in the tube. It also causes the ice tray to overfill because it is allowing water to bypass when it is supposed to be shut off. (Common problem after unit is 4 - 7 years old)
Your inlet water valve needs to be replaced PN: 2182106

Sears parts direct lists it under your model number for $70.92. As you can see from the net search... you can get them MUCH cheaper.
When you change this inlet water valve... save yourself all the headaches... Change ONE line at a time and One connector at a time. Hook up the main water supply LAST.
This will fix your current problem.
