Hello there,
First you need to know that the guiter hero 3 comes with a wireless dongle on it. It is most times attached to the bottom of the guiter hero 3. Slide it off the guiter and connect it to your playstation 3, a light will flash on the dongle. Then you press the PS button on the guiter 2 times and it will connect.
This could take a while for you to get it but most times it takes two taps on the button.
There are other ways to try such as:

1. If you play Guitar Hero III on PlayStation 3, you'll get a wireless controller, but it doesn't work seamlessly with PS3's built-in Bluetooth. You'll have to plug a dongle into the USB port on your console.
2. if you're going to have a dongle hanging there, you may as well make it pretty. Guitar Hero's is shaped like a guitar pick.
3. The dongles have sync buttons on them, so you can just tap the button on your controller, then on the dongle to sync them up - perfect if you have more than one controller.

Here is another way to connect you guiter hero 3 to your playstation 3.
Do the following to connect and sync your guitar to the Playstation 3.
Connect the wireless dongle to one of the USB ports on the front of the system.
If there is a solid red light on the dongle check your guitar for a red indicator light. If there is a light you are finished.
If there is no light or the light is flashing press in the small button on the front of the dongle
A red light will flash on the dongle and the position indicator lights will flash above the guitar's strum bar
Press in the PS button on the guitar, the red lights above the strum bar will stop flashing and only one red light will remain illuminated. It may take several seconds after hitting the PS button for the flashing to stop. If it is taking longer than a few seconds and the lights are still flashing press the PS button again, you may need to hit the PS button several times.
If all of the lights flash and then go out do the following. Move or turn off anything near the PS3 that uses a wireless transmitter (this includes cordless phones and other non PS3 wireless controllers). If your PS3 is inside an entertainment center please remove it and try to sync the guitar again. Large metal objects near the wireless transmitter can also interfere with the signal. You should also vary your distance to the console, if you are far away come a little closer, if you are close move back. We have seen people being to close in particular cause issues during the syncing process.
If any of this does not work, then you will have to take it back to the dealer that supplied it to you. It should still be under warranty.

Turn the PlayStation 3 on and start the game.
On the dongle (while it's plugged in) press the button, then on the guitar look for a small pin hole, press a paperclip into it and hold for three seconds. And then press the PS button on the guitar.
That should take care of that!

3. Press and hold the PS button on the guitar to turn it on.
4. Turn on your PlayStation 3 console.
5. Press the connect button on the wireless receiver (not the guitar). The status light will flash, indicating that the receiver is searching for the controller.
6. Press the PS button on the guitar to establish a connection with the receiver. (You may have to wait for the receiver to stop flashing so fast. I think it flashes real fast at first, but then slows down.)

Also, make sure the guitar is assigned as control port #1.

Another thing that may help. Unplug all your usb cords that recharge your headset or controllers. Make sure the USB connector is the only thing pluged in and in the furthest left slot. That is what i had to do.

2. change out the batteries (and check if batteries are secure.)

if its brand new u need to register it on the PS3

Power on your Xbox console and allow it to load to the Xbox dashboard.

Press the green Xbox controller on the guitar. All four lights surrounding the button should start flashing.

Press the connect button on your Xbox console (It's next to the Memory Card #2 slot).

Press the wireless button on the "Guitar Hero 3" guitar (Look for the on the bottom of the guitar).

Wait for the four lights to stop flashing, with one light becoming a solid green. Your air guitar should now be connected remotely to the Xbox.

I only have the guitar version but... on the PS3 menu (not inside the game) go to settings --> change controller number (or words to that effect) and change the controller number of the guitar.

using the guitar, outside of the game go to settings (and this is from memory so forgive me if it's not 100% accurate) and then controller settings and assign controller number... change it to a lower number. I chose 1. Problem solved.
