Tag Heuer watch
The knob is a screw-cap seal. When closed (screwed in) it closes the chamber to prevent water from entering the watch.
You will need to unscrew it. It should snap out. In this position, you can wind the watch. Pull the knob out one click, and you can adjust the date. Pull the knob another one more click, and you can adjust the time.
Push the knob back in. In order to seal the watch back up, you will need to push the knob in while turning the knob. You will know you did it correctly when the knob will not turn any further.

It depends. Maybe your skin is very sensible. May be the material used is't good for you. But mostly the main reason is: crown (you say knob) is too large for the wearer or have too sharp edges. Visit your nearest watch repair shop and explain what the problem is. Watchmaker will find other crown (different in shape and size, but no lesser quality) and will fit to your watch for your comfort. Rate me, plz.

Yes it is correct as your watch has a counterclockwise crown forward setting direction. This is due to the specificaly layered lever and setting gear construction, so, nothing wrong with your watch.

There are several links that have a pin that can be removed. Removing two adjacent links and replacing the pin without the middle link is that way to do it. I could go on and on, but this site shows you how...
