Try to do this not sure if it will 100% work but I'm impress you won't give up easily. Try to keep riding onward until you hear Jubilife City music(which you heard already) in the background. Now, pop open the menu after that open up any category. Click exit the menu and the graphics should return to normal.
If it doesn't work, try to redo/preplay that step over from the last pace you have saved it since there's a chance for you not to reset the game over again.
