The first thing I would change is the thermocouple...however check the one that is in there and get one exactly like it... usually they are what is called a power pile generator... that is not a normal thermocouple...

Mr. Muscle Commercial oven cleaner, a good brush, a stainless steel scrubbie. Boil out the pot in accordance with Mr. Muscle directions. If all else fails, find "SWELL" oven cleaner in Restaurant supply, use rubber gloves. Spray on, let sit, Use brush and Scrubbie to remove. RINSE WELL!

wiring diagram should help you. After ensuring all of the wiring is correct, ensure all connections are clean and tight. Make sure the thermopile is properly positioned such that the pilot flame engulfs the thermopile. Test for continuity across the High Limit terminals to ensure the switch is closed and voltage is passing through it. If you continue to experience problems, replace the gas valve.

with the control board. The control board fails to hold onto power when
the device is heated up, that why it goes off automatically..

Imperial cif 40 single tank bouble basket deep gas fryer
When the whole unit shuts down including the pilot light the thermocouple is not working properly. The thermocouple is what tells the gas safety valve that the pilot light is lighted. When the thermocouple fails and does not send the milli-volt (mv) signal to the gas safety valve due a failure the gas safety valve turns off the gas supply. (i.e total shut down)
If you have a handyman around you can have him disconnect the thermocouple from the gas valve control and clean the mating area in the gas valve and on the bitter end of the thermocouple. After cleaning then reconnect the thermocouple. This sometimes corrects the problem. FYI you can get a thermocouple at most any large appliance parts supply. (You will need to the know total length) It would be even better to have the old one in hand during the trip to the parts store.

Imperial Gas Fryer Problem
For the first problem you describe the thermostat it seems that is not working properly and in any case for a gas fryer despite the fact that their is an additional safety thermostat it wise to replace the main thermostat after 5 to 7 years. So thermostat I sugest to be replaced.
As for second indication and cosider also the first indication with thermostat are all indication that thermostaticaly gas valve is not working properly. Since this is an expesive part some specialist can recondition gas valves but it is a delicate and presise jop. If you can not find such a specialist so we advice to replace also the gas valve.
Gas valves are mulfuction mainly from years of oil spoling on them and and in compaction of the heat they make them act like crazy.
Its still bubbling when i raise the baskets
That is common if there is a lot of moisture, frost, or ice on the food being fried. Water can also collect at the very bottom of the fryer or in the drain pipe where it can be under 212F. If this is disturbed, the water can suddenly boil up. The oil itself will generally not boil unless heated quite a bit above normal operating temperatures. It will smoke heavily before it boils.
Gas not getting to pilot
Is the pilot lit? If not and you have a quick disconnect gas hose, disconnect it and connect back up. Make sure you get it completed seated.
Pilot light goes out when i let off the button.
Yes it does. The high limit is a safety device on all fryers. For your fryer it is mounted on the right side inside the door. Push in on the red stem sticking out of the front of it. If it is tripped you will hear a click when you push it and then the pilot will probably stay lit. If it is a case of the high limit tripped....then you need to check your thermostat and make sure that it cycles the main burners off at the set temperature.
Pilot won't stay lit
Please provide more info. Does it stay lit after you release the button on the gas valve or does it stay on for awhile and then go out.
Grease bubbles over sometimes
Your thermostat is not working right,I do hope you have new grease without no water in it,Have you checked grease temp?
