LEGACY 12 QUART AND 20 QUART COMPATIBILITY????? I
Hi,
In picture it may look alike but actually the size varies.The length of 12 vs 20 bowl varies.it goes on increasing like 40 qt and 60 qt.The mouth of the 20qt will fit but the length will not get adjust.The bottom leg of the Mixer will be a problem.It cannot adjust to it.You cant change the leg alone.

Hobart L800 will not stay
If it has a bowl guard on it then it could be the bowl height switch or the side switch on the contactor. If it does not have a bowl guard then it is more than likely the contactor side switch.Check

Well let us see what you are mixing maybe you are putting to much flour in the bowl and stressing out the hook could be a cheep replacement hook most of them are coming from china now and do you know there are two different style hooks one is a "J" hook and the other is a spiral hook al of your larger machines use the spiral hooks
D340 Mixer Paddle slipping
if the paddle is slipping while the agitator shaft is turning then you may have a problem with the agitator pin shaft it is either gone or not engaged
The mixer rpm is too fast
No change available. The motor speed if fixed and the 3 speed transmission has fixed gear ratio's. Look at the new HL300 model. It has a stirr speed which is slower than first speed.
Does your mixer havea safety cage? If not, you will need to install one before too long , or the machine will not comply with current safety standards. Put the cost of the safety kit towards the HL300.

you do not say what model mixer you have but more than likely the shifter yoke is faulty
Where can I get a manuel for my hobart D-340
What kind of manual do you need. The service manuals are only given to Hobart technicians while they are attending training classes for that paticular piece of equip. I have a parts manual w/ exploded views if needed. A operators manual/guide can be downloaded from Hobarts website. You will need Model, Serial & ML # or spec #.
Dry clumps in pizza dough
Hi. You should consider a few things. They type of hook you use, can greatly affect your end result. If you're making a yeasted dough with a high protein percentage 12-13%, you should be using an "ED" hook, this is a spiral hook that has a sharp turn at the tip. You can find them on eBay for a competitive price. I believe that Hobart also sells them, but for a higher price. They are very good for mixing pizza type doughs, they also do an excellent job kneading the dough.
Have you checked the flour for lumps before it goes into the mixer? Have you tried sifting the flour?
Are you adding all the liquid and flour at once? If so try adding flour in stages to all the liquid. If you find that this solution helps you, please rate it. Good luck! ricardok45
