My pioneer gm 5300t amp cuts off at loud volume and will not kick back on until it is turned down and cools off, what is wrong with it?

You are over heating it,You have your speakers wired up for a lower,(OHM) Rate then the amp can handle, That why it cut out when you have it turn up

Are subfoofer ts-w308d2 and amplifier

Yes. You will be able to run this setup with the sub bridged across both channels of the amp, which will give you more power (which the sub will be able to handle: 380 watts rms), or with the sub wired to a single channel, which will give you less power (125 watts rms). The sub can handle 400 watts rms.

Hello sir, hi, YOU DON'T bridge no more speakers, this upsets the impedance load of the amp. to install another sub-woofer, get another amplifier. You may have damaged your power amplifier, If you experience repeated fuse blows, your power amplifier is now SHORTED. This needs IC amplifier replacement.

I have mine hooked up to two 12in pionners it

So maybe that amp isn't made to go or take that much amount of power. It is only a 760 watt so i would say you might want to think about upgrading. Also check your battery wire and your ground wire
