I have a 1985 Honda
First of all please check if the speakers are connected in phase. That is if all the positive and negative terminals are connected OK. Simple way to check is to turn the fader control first to the rear and then while playing some music with heavy beat ( dance music ) turn the balance to one side. Listen and see if you are getting good bass. Then turn the balance and bring it to the middle ( 0 ), when you do that if the bass is becoming flat-- one of your back speakers are out of phase and canceling bass. If thery are in phase the bass should become full and rich. Do the same by turning the fader to the front and try swinging the balance. If all is Ok , yes you will need an Amplifier to satisfy you. Make sure you buy something that can match the power of the speakers you have installed in the car.
The out of phase syndrome is a very common problem.

I completely disconnected my amp and then hooked
you may have already blown the amp...if it is doing this with no speakers hooked up to it trace your power and negative line to ensure there are no breaks or kinks in the line...also verify you ohm loads and such and that the amplifier can handle what you are introducing to it( if in fact there are speakers hooked up to it)..as i said b4 however there is a good chance the amp is blown already

My stereo is installed outside in my BBQ island.
If water did get into the cover of it the circuit board may have got condensation inside and on it. There is no way to tell if there is condensation is to look inside the amp and inspect the circuit board. Also I would not run power through it because if there is condensation on the circuit board you will fry the components.

Is the sony xplod cdx-gt71w
Sure is.
The sony is bridgable as follows:
100W x 4 @ 4 Ohm
100W x 2 + 250W x 1 @ at 4 Ohm
This will allow 2 channels to run 100 watts each @ 4ohms with an additional single channel with 250 watts @ 4 ohms.
The single sub channel is created by bridging channels 3 & 4

Amp kicks off after a few minutes of play. It
My best guess is that your over loading the amp. Check and see if the amp is hot when it cuts off. Most amps have a "safety" cutoff that will shut it off if it get to hot

The entire unit will not
Have you checked all the connections, especially the "remote" turn on from the stereo? This wire is usually a small gauge "blue" wire coming from your head unit. When you turn on the head unit it will remotely power on the amp.
