I dont know how to adjust the ringer volume

The manual is available for free download from www.manualslib.com A Google search on "vtech t2326 manual" will take you right there .... follow their site instructions, enter the "spam protect" numbers and choose "download the .pdf file" Be careful of clicking on the advertising that might take you into strange areas for other purposes. Hint: during name entry, the "VOL -/CID" button will backspace/erase letters and the "VOL +/DIR" button will enter blank spaces. Letter selection is familiar to text messaging ie, the letter B is a result of "22" being keyed, the letter R is "777" etc. -- Good luck !

WE need to know how

There's nothing about voicemail in the manual since the T2326 isn't an answering machine. If you're subscribed to a voicemail system offered by your phone company, contact them for instructions. If you have a separate answering machine connected to your phone line, consult its documentation.

Our phone says that we

Your phone service provider is sending a signal on your phone line that is activating the message waiting on your phone. Likewise the beep-beep-beep you hear is called stutter dail tone which is sent by your phone service provider to indicate that you have a message in voicemail for phones that do not have message waiting or message waiting light ability. To cancel the message indicators, you'll need to call your phone service provider customer support and have them disable voicemail. Nowadays, voicemail service is often automatically added by service providers, especailly if you have recently changed service providers or your service provider has upgraded their switch equipment.

How to disassemble vtech t2326 phone

I wouldn't recommend disassembling it.
One common solution to dry out the phone is to put it in your oven. Preheat your oven to the lowest setting, normally ~180 degrees. After it's done preheating, turn it off and wait for about 15-20 minutes. Then place your phone inside your oven and close the door.
The temperature by waiting will decrease to around 150 or less, which won't melt the plastic case, but will give enough heat to dry out the phone. Leave it in there for an hour or so, then see if it's dry.
Before you do it, remove the battery and battery cover from the phone. This will give the moisture somewhere to escape, and reduce your risk of damage to the battery pack.

I live in South Africa. Ordered a vtech 2 handset phones, DS6621-2 on Amazon & it came with 12 volt charger for main cradle. Can I get 6 volt charger with the right fitting and if so, how?

You are heading at this from the wrong end. The power to the device from the charger remains the same. If the device runs on 12 volts, it needs 12 volts. South Africa runs on 230 volts, so if you bought a 110 volts version, you buy an adapter that takes 230 mains voltage in, and delivers 12 volts DC to the phone. The phone won't run on 6 volts. 230V South Africa operates on a 230V supply voltage and 50Hz. ..
