I need to silence the low detergent alarm - Ecolab.
This is a Commercial dishwasher / ware washer / glass washer? I used Ecolab at my last job. If it a liquid detergent you can fill the container with water. If it is the solid block in the bottle with the wide neck and the handle in the bottom that you put into a dispenser neck down, the only way would be to borrow one, or ask you rep to drop on in to you. Or track where the beep is coming from and cover it with something to lessen the sound.
If you think this might happen again, keep a spare one hidden away in an office.

Aiwa turntable keeps running all the time
Look for the motor switch on the underside of the mechanism. It's normally activated by the OFF-33-45-(78) lever and disengaged by a slider or cam tied to the tone arm mechanism. Make sure it isn't broken off its mount or hasn't lost a piece that's supposed to push the contacts apart. In particular, when you open the turntable, look for a screw floating around - it may be what is supposed to hold the switch in place.

The dishwasher timer knob gets stuck at a particular point each time
Very seldom does the timer go bad. The timer will often get the blame when something else is the real problem. If the dishwasher is heating water, the timer will stop until the water reaches the correct temperature. Without knowing the make and model of the dishwasher, I can’t provide a better answer.
